Triple Nut Chocolate Chip Cookies

These cookies are delicious and packed with chocolate chips, almonds and walnuts with a peanut butter base. Although they are made with brown sugar and table sugar, you can find the good in these cookies from the healthy fats from the almonds, peanut butter and omega 3s in walnuts! Serve with a glass of unsweetened soy milk (or your milk of choice) to add some calcium. One cookie (or two) a day never hurt anyone, right?

 

Ingredients:

3/4 cup all-purpose flour

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp baking soda

1 stick unsalted butter

1/2 cup brown sugar

1/2 cup table sugar

1/2 cup peanut butter

1/2 tbsp vanilla extract

1 egg

1/2 cup semi-sweet chocolate chips

1/4 cup almonds, chopped

1/4 cup walnuts, chopped

 

Directions:

Preheat oven to 350 degrees. In medium bowl, combine dry ingredients up to baking soda. Set aside. In stand mixer, cream butter and sugar until smooth. Add peanut butter, vanilla extract, and egg and combine. Add dry mix to wet ingredients. Fold in chocolate chips, almonds and walnuts. Chill dough in refrigerator for 20 minutes. Scoop out 1 tablespoon balls of dough onto parchment lined cookie sheet. Bake for 15 minutes or until golden brown.
