Almond crusted French Toast

French Toast can get a bad rep at times, but this French Toast is made with Sourdough bread, coated with almonds and topped with fruit. Serve with your choice of protein for a balanced breakfast. Nothing bad here!

Serves: 1 -2


3 slices of sourdough bread

1 egg

1/2 cup almond milk

1 tsp cinnamon

1/2 tsp nutmeg

1/4 cup chopped almonds

1/4 cup instant oats

1/2 cup frozen fruit

honey (optional)



Whisk egg, almond milk, cinnamon and nutmeg together in medium dish. Place sourdough bread in egg mixture, thoroughly soaking bread. Heat cast iron skillet over medium high heat. Combine oats and almonds. Place soaked bread in almond mixture to coat. Cook French toast for ~3 minutes on each side or until golden brown. While French toast cooks, heat frozen fruit on low heat with 1/4 cup of water to make a fruit reduction. Serve French toast topped with fruit mixture. Drizzle with honey if desired.
