Overnight Oats

Overnight oats are extremely popular. We all want a healthy breakfast that we can grab and go. I’ve tried overnight oats before and haven’t liked them, but this recipe is sooooo good! I added more liquid because I don’t like my oats as dry/thick, and voila! overnight oats I can enjoy. The chia seeds thicken this just enough and the banana gives it more natural sweetness.

The good in this? Walnuts and chia seeds are a great source of Omega 3 fatty acids that help lower triglycerides. The fiber in oats are also shown to decrease cholesterol. In addition to this, all plant based protein sources are used, making this a perfect for a heart healthy breakfast.

Ingredients: 

1 c soy milk

1/2 c old fashioned oats

1 T chocolate almond butter

1 T chia seeds

1/2 banana sliced

1 tsp Georgia Wildberry honey

Toppings: 

3 strawberries, diced

1/4 cup walnuts, toasted

1 tablespoon peanut butter, melted

Directions:

Combine all ingredients through honey in mason jar and stir well. Refrigerate overnight. Warm oats (if desired – a must for me, cold oats are not my thing). Top with sliced strawberries and walnuts, and drizzle with melted peanut butter (or toppings of your choice).
