This lemon ginger chicken is a super easy addition to your week night menu. Simple ingredients add bold flavor that’s light and perfect for summer.
The Good in this? Ginger! Ginger is a root spice with many anti-inflammatory compounds. It has been used to treat nausea, morning sickness, and arthritis. In addition to this, it has also been studied for it’s use in diabetes, elevated cholesterol and weight loss, but there is insufficient evidence for it’s use in these conditions at the current time.
Lemon Ginger Chicken
Ingredients:
2 large chicken breast, diced
zest of 1 lemon + 1/2 lemon juiced
1 T fresh ginger, minced
2 cloves of garlic, minced
1 T sesame oil
1/3 c lower sodium soy sauce
1/2 T brown sugar
1 t cornstarch
Directions:
Combine lemon zest, lemon juice, ginger, garlic, soy sauce, sesame oil and brown sugar to make marinade. Pour marinade over chicken and refrigerate for 20 minutes. Heat cast iron skillet over medium heat. Place chicken in skillet and preserve excess marinade. Cook chicken about 10 minutes until done. Add 1 tsp of cornstarch or arrowroot to remaining marinade to thicken and pour over chicken. Cook for another 10 minutes. Serve with broccoli and udon noodles.
