Breakfast is definitely my favorite meal of the day. These waffles are easy to make and they freeze really well. Take them out of the freezer and pop them in the toaster for a couple minutes and Volia! A quick breakfast. If you’re watching sugar intake, serve these plain or with a nut butter. Easily pair these with boiled eggs to add more protein. And of course the good in this is the turmeric. Turmeric gives these waffles a pretty color and is good for fighting inflammation. We can always add great things to some of our favorite foods to make them better for us.
Lemon-Turmeric Waffles
Ingredients:
2 cups all purpose flour, sifted
1 1/2 t baking powder
1/4 t baking soda
1/2 t salt
1 tsp turmeric
1 T sugar
1 t vanilla extract
2 eggs
1/3 cup oil
1 3/4 c buttermilk
zest of 1 lemon
Directions:
1. Sift all dry ingredients together
2. Combine egg, oil, buttermilk, vanilla extract and lemon zest in bowl
3. Add liquid ingredients to dry and combine. Leave a few lumps in the batter
4. Cook batter in waffle iron according to iron directions
5. Serve with toppings of choice
