Pan seared salmon with a tasty pineapple ginger sauce

Ingredients
2salmon filets, skin on3-4 ounces each
1/4teaspoonsalt
1/2teaspoon black pepper
2teaspoonsfreshly grated ginger
1/3cup crushed pineapple (with pineapple juice)
1teaspoon honey
1tablespoonbutter or butter alternative
cilantro for garnish
Instructions
Preheat oven to 350 degrees F.
Place salmon filets on plate or cutting board and use paper towel to remove any extra moisture from filet. Season each filet with 1/4 teaspoon black pepper and a 1/8 teaspoon of salt.
In a cast iron skillet or oven safe pan, heat 1 tablespoon of olive oil. Add salmon filets flesh side down and sear 3 minutes. Flip salmon and place salmon in oven for 15 minutes or until salmon reaches 145 degrees F.
In a small bowl, combine pineapple, ginger and honey.
Remove salmon from oven and return to medium heat. Add butter and pineapple ginger mixture. Stir to combine and let reduce for 3-5 minutes. Use a spoon to coat salmon in mixture. Top with cilantro and serve.
Notes
Use more pineapple juice with the crushed pineapple if you want a stronger pineapple flavor
