Is it possible to go wrong having salmon with pineapple and ginger? I don’t think so! I ordered groceries online this week and ended up with a large piece of ginger root. Luckily I am a ginger fan so I will be putting it to good use. I’m a also a huge fan of salmon and I can honestly eat it plain with just salt and pepper. However, I had some things at home that I needed to use up, hence this super tasty dish. This is not a “glaze” for the salmon but you can definitely make a pineapple ginger glaze by adding brown sugar and a corn starch slurry to thicken it into that. Why is salmon good for you?
Salmon contains Omega 3 fatty acids that play many roles in health. From heart health, to brain health, and can even promote skin health.. omega 3s are the bomb! The Dietary Guidelines for Americans recommends consuming 8 ounces of seafood per week to help with heart disease prevention. Seafood also contains Vitamin D and this recipe contains 38% of the recommended daily allowance! Vitamin D is an important vitamin and low blood levels have been linked to several diseases. Seafood also has B vitamins, and minerals including calcium, iron and zinc to name a few.
What are some substitutions for salmon?
Tuna, trout and sardines are also good choices since they are higher in heart healthy omega 3s similar to salmon.

What are the benefits of ginger?
Ginger consumption has been linked to relief of GI issues including nausea and to treat arthritis. It has also been studied for it’s use in diabetes, elevated cholesterol and weight loss, but there is insufficient evidence for it’s use in these conditions. Can you eat the skin on salmon?
Yes! The crispy skin is my favorite part on the salmon. Now, it might take some time to master but once you get it right, you will love it. The key is to make sure there is not too much liquid when cooking that it causes the skin to be soggy. I used fresh salmon with the skin, but it’s perfectly fine to use salmon without the skin.
Pineapple Ginger Salmon
- 2 salmon filets, skin on 3-4 ounces each
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons freshly grated ginger
- 1/3 cup crushed pineapple (with pineapple juice)
- 1 teaspoon honey
- 1 tablespoon butter or butter alternative
- cilantro for garnish
- Preheat oven to 350 degrees F.
- Place salmon filets on plate or cutting board and use paper towel to remove any extra moisture from filet. Season each filet with 1/4 teaspoon black pepper and a 1/8 teaspoon of salt.
- In a cast iron skillet or oven safe pan, heat 1 tablespoon of olive oil. Add salmon filets flesh side down and sear 3 minutes. Flip salmon and place salmon in oven for 15 minutes or until salmon reaches 145 degrees F.
- In a small bowl, combine pineapple, ginger and honey.
- Remove salmon from oven and return to medium heat. Add butter and pineapple ginger mixture. Stir to combine and let reduce for 3-5 minutes. Use a spoon to coat salmon in mixture. Top with cilantro and serve.
